Group by assigned to
Under the Board view add "Assigned to" under Group by - just like in Planner which uses the same board framework.

We’re excited to announce that this feature has been rolled out! You can now go to the Task Board view, and go to Group By > Assignee and see who’s assigned to what across your project.

I also agree with option 2. Would love to use the 'Group by Assigned to' feature. We are thinking of using one Project for the entire organisation, so that everyone is aligned and not planning in siloes. For us to do this, it becomes almost essential to Group by Assigned to, otherwise the number of tasks makes it impractical. Your own tasks gets lost between the rest.

Absolutly agree with Prasanna Adavi! Option 2... or in an ideal world you can choose when creating the task like you can within an power automate approval! (Who needs to approve? all /first)

My vote would be Option#2. multiple people are assigned to a task generally because there are distinctive pieces to complete. Completing the entire task when one person is complete, does not help this. At the same time if you keep the task open for both, you are filling the queue of the person who already completed the task.
